Why Locals Love WADAYA

WADAYA is a vibrant Japanese restaurant located in the heart of Fremont, CA, specializing in mazemen—a delightful dry noodle dish that offers a unique take on traditional ramen. If you’re craving bold, umami-packed flavors paired with perfectly textured noodles, this eatery promises a memorable dining experience that stays true to authentic Japanese comfort food.

At WADAYA, the spotlight is on their signature mazemen variations, each thoughtfully crafted to balance intricate flavors and textures. The Deluxe Mazemen is a crowd favorite, featuring tender slice pork chashu, spicy minced pork, poached and soft-boiled eggs, aromatic scallions and chives, powerful minced garlic, fish umami, and a delightful sprinkle of seaweed flakes—each bite offering a harmonious symphony of spicy, savory, and rich notes that linger deliciously on the palate. For those who prefer a milder yet satisfying option, the Saitama Chicken Mazemen presents a milder spice level with peppered ground chicken and the same savory mix of fresh herbs and umami boosters.

Apart from mazemen, WADAYA’s rice bowls offer equally tempting options. The Chashu Bowl expertly layers marinated diced chashu over steamed rice, topped with scallions, Japanese mayo, and seaweed flakes, creating a comforting dish that’s both simple and deeply flavorful. The Karaage Bowl features Wadaya’s house-style fried chicken with a tantalizing drizzle of red sauce and sriracha mayo, garnished with sesame seeds—a treat for those who enjoy a little kick. Customers who prefer more spice can opt for the Umami Bowl packed with spicy minced pork and fresh cilantro.

The restaurant also boasts a carefully curated selection of alcoholic beverages, including Asahi draft and Sapporo bottles in different sizes, perfect for pairing with your meal and enhancing the dining experience.

Visitors consistently praise WADAYA’s warm, friendly staff who take the time to explain how to best enjoy mazemen, ensuring even first-timers feel confident and welcomed. The South Bay gem is known for its bright, clean, and spacious interior that can comfortably seat up to 64 guests. While the atmosphere is casual and convivial, some have noted that the music volume tends to be a bit loud during peak hours, yet this only adds to the lively, bustling ambiance that characterizes popular local hotspots.

Reviews highlight the genuine care WADAYA’s team puts into service. Erin Fiona Nachbar shares how the staff’s bubbly and warm demeanor elevated her meal to a “10/10” experience, going above and beyond to ensure satisfaction. Another guest, Jenn Went, found the karage enjoyable and appreciated the detailed guidance on navigating the menu's unique dishes. Although not all experiences are flawless—some guests felt the noodles in the Tokyo mazemen could better integrate with the sauce—this offers a glimpse into how the restaurant continues to grow and fine-tune its offerings.

Whether you’re a seasoned mazemen enthusiast or exploring Japanese dry noodles for the first time, WADAYA offers a thoughtfully crafted menu that tempts the senses with rich umami flavors, fresh ingredients, and a friendly atmosphere. For food lovers in Fremont looking for a standout Japanese meal with heart and authenticity, WADAYA is a must-visit destination.

The deluxe mazemen was delicious. The karaage was good though it would have been better without the tangy sauce drizzle (I like to dip my karaage in mayo). Servers were friendly and good at explaining how to eat mazemen, decor and ambience were okay, music was slightly too loud. It was pretty busy on a Saturday afternoon around 3.

Waited about 30 minutes to be seated which isn’t a big deal, for first timers menu was explained and we were welcomed(warmly) and with smiles. Food was a 10/10 for me, I enjoyed everything about it. The staff are bubbly, welcoming and warm just as I mentioned above. They go above and beyond to make sure you’re satisfied. Thank you and will come again.

New Mazemen restaurant in bay area. It is specialized in mazemen. It was quite busy when we arrived. It has promo of 50% Mazemen between Sept 1 to 3 as it is grand opening. Insidevus pretty roomy where it can fit 64 people at a time. I wish they have bar style so easy to accommodate one person eater. I see one table for 4 people with just one customer. You can scan qr code to see the menu but you cannot order from there. We order deluxe mazemen, spicy miso ramen and chicken karage. The recommendation on the mazemen is to mix it with vinegar. At the end they will provide small scoop of rice and we can mix it with the remaining of mazemen. The mazemen is the highlighted dish. The noodle is chewy which I really like. It has strong may be anchovy/seaweed. taste. The miso ramen is so so. I wish the noodle is different. The chicken karage is a twist of Korean fried chicken as it is glazed with regular Korean fried chicken glazed. Overall it was good. I will come back for the mazemen.

I went here for lunch and was seated right away. The menu was interesting. I ordered the Tokyo dish, and the waiter was very friendly and came over to chat. He asked if I'd ever been to Tokyo. I smiled because my mother and brother are both in Tokyo. The noodles were very thick and didn't really blend in with the sauce. It felt like the noodles were just noodles, and the sauce didn't stick to them. At the end they brought the small cup Of rice mixed of the sauce and good for ending .

The restaurant is very bright and clean, with friendly staff and quick table turnover thanks to efficient clearing. We ordered their signature dry noodles and a bowl of California Tonkotsu Ramen. Dry Noodles: The noodles were pleasantly chewy with well-balanced seasoning. The chashu had a noticeable grilled aroma, which added great depth. At the end, a small portion of rice is provided so you can mix it with the remaining sauce—delicious and a thoughtful way to avoid wasting any of it. Ramen (with soup): The soft-boiled eggs in both bowls were perfectly cooked. The broth was well-balanced, smooth, and easy to drink without feeling too heavy. Dessert: We had the Hokkaido milk flavor, with the black part made from bamboo charcoal. The milk flavor was rich but not overly sweet—just the right finish to the meal. Overall, this is a solid restaurant with good food and service. Definitely worth checking out.

We visited on a Friday evening. The place was busy, and there was about a 10-minute wait for a table for two. It is a small space, but it doesn’t feel too crowded. This was our first time here, and the staff were very helpful, explaining the menu and giving recommendations. We started with the Chicken Karaage and Vegan Nuggets (though we later realized we ordered too much; one starter, or even none, would have been enough for two!). For our mains, we got the Dry Ramen (Mazemen). My husband had the chicken and I chose the vegan option. The vegan bowl actually tasted better thanks to the smoky flavor of the Brussels sprouts, a dash of chili oil, and the creaminess of the miso. They even provide a small bowl of rice as you’re finishing your ramen to mix with the remaining sauce. It was the highlight of the meal! Oi-meshi is Oishii! (Thanks to first few lessons of Duolingo heehee) A friend recommended this place to us, and I’ll definitely be listening to her suggestions going forward because this one was spot on!

Happened to see it while scrolling Yelp looking for something new to eat. This is located in the Ranch 99 market plaza in Fremont Blvd. They are new since September 2025. Nice modern decor and plenty of seats and possible a big group as well. My hubs and I were all greeted by their staff. Very friendly and helpful staff. They helped us to decide the best options on their menu and what to expect since it's a new way of eating dry ramen called Mazeman. I tried the Cheese Mazeman and my hubs had their Deluxe Mazeman. The deluxe had everything but I like cheese. Haha We also had their Ikageso which is fried squid legs. Definitely, have their Asahi draft with your meal. ;) We actually tried something similar in San Mateo but it was ok. I really enjoyed the atmosphere and hospitality here as well as the food. Will definitely come back. I can't remember the young man's name but props to him how to eat their food. My first review of 2026!!

Wadaya hasn't left my mind yet. I love that the noodles are thicker than Kajiken. It makes for a chewier bite which I prefer. I'd say the taste is similar to Kajiken but maybe the flavor at Kajiken is a bit better. I definitely like the noodles here more. The absolute star of the show is the tiny scoop of rice they give you at the end to mix in with your extra sauce. I wasn't a believer at first until I actually tried it. Best bite ever. Holy.
